GI Appointment and Reintroduction of Dairy

So we had our appointment with the pediatric GI for Amber on tuesday. It went fantastically well other than leaving us still a bit confused as to why this happened, but I guess sometimes you just can't explain things. Dr C told us that we had likely already figured out the issue given Amber's weight gain. She is no longer labelled Failure to Thrive and her doughy feel to her body (i.e. no muscle tone) is gone. Dr C told us that while Amber may still have celiac, it was up to us to determine how important it was to figure that out. If we were comfortable doing what we're doing now, then we should just continue on.

She gave us some advice in reintroducing foods to see if we are right in the intolerance level of said food so we're trying that one food at at time in the order of dairy, wheat, soy and eggs.

So here is what Amber has eaten so far:
Wednesday - cheese string, slice of cheese
Thursday - 3 pieces of cheese, chocolate
Friday - small piece of chocolate
Saturday - grilled cheese sandwich (on GF bread), chocolate, kids size white hot chocolate from Starbucks, 2 pieces of cheese

My daughter is a gigantic chocolate lover so we're trying to get rid of the (super tiny) easter chocolate she got (and thanking everyone who didn't send my food-allergic kids some chocolate!). We have seen the following changes in her:
- her poops have gone from being relatively normal in texture to being more like small balls and the other day her poop was on the green side (as an aside, Caius' poop has also gone in this direction as his dairy intake has also increased this week)
- yesterday and today she was exceptionally tired and even mentioned needing a break from playing mid-afternoon
- no changes in skin
- her tummy seemed a bit bloated tonight, but otherwise it has been fine

We will do another 3 days of dairy and then remove it again for 2 weeks - we will do 2-3 cycles of this to see if the changes are consistent, etc so that we can make a strong conclusion for ourselves.

On a side note, I ate way too much dairy today (I normally limit myself to 1 lactaid milk beverage at work but today I had 2, plus a grilled cheese sandwich, plus a yogurt, plus 2 pieces of cheese) and I am HURTING!!! OY!! Since I've drastically decreased my dairy I think my body is even more sensitive to small amounts (which is okay with me) but oy! Not worth it!
